Kale Chips

Kale is a dark green leafy vegetable related to the Broccoli family. It comes in curly and flat form. Either is fine, but curly is most available. Kale is high in protein, vitamins and minerals. You can find it in the Produce section among other greens like mustard, etc.

  • 1 bunch of kale - wash it very well

  • Pat the kale dry and strip the leaves off of the stems (if you like you can cut up tender portion of stems and steam or stir-fry or add pieces to soup stock)

  • Tear leaves in to bite-sized pieces

  1. In a large bowl toss the leaves well with a couple of tablespoons of olive oil

  2. Salt to taste, taking care not to over-salt

  3. Pre-heat oven to 350

  4. Place leave pieces onto flat oiled cookie sheet baking pan

  5. Bake for 10 minutes or so

  6. Check and turn with spatula and bake other sides for another 10 minutes or so
